Cottage Cheese

Here is my cottage cheese. Before we eat it I will add some cream so it is not so dry. It was so easy to make. I will share the recipe and you can give it a try.
1 gallon skim milk you need the cream to add later
You can use whole milk but you will need some cream
1/2 cup vinegar
Put your milk in the pan and slowly bring it to 190%. Once you reach your temp take it off the heat and add the vinegar. Stir in vinegar and cool for 30 minutes. Then strain through cheese cloth. Try to squeeze as much liquid out as you can. Then you take the hunk of cheese you have put in a bowl and chop in to small curds. Add salt and pepper. When you are ready to eat add cream to your liking. I keep the whey to boil noodles, make soup or bread.

Raw Cream

Our cow has been dried up so we have been getting milk from the amish. Here is my jar of raw cream I skimmed off. My hubby asked me to make cottage cheese so cottage cheese it is today. Have a great Saturday!

Supper

Our supper tonight! Lentil, bean and vegetable soup. French bread with garlic, italian seasoning and parmesan cheese. Nothing hits the spot on a cold night like hot soup and bread.

Christmas

Hello Everyone, Long time since you have heard from me. Christmas season was a very busy time around here. Lots of shows and lots of order were going out. So that means we sold lots of product which was a good thing! We had a very nice laid back Christmas with the family. It was so fun this year watching my grandaughter open presents. Believe it or not in about two weeks my grandaughter will be a year old. WOW! where does the time go. She is standing up on her own and thinking about walking. I went to see her yesterday and it was so cute I got ready to leave she said bye in her so cute baby voice. As for the farm busy as usual. We have about 80 head of cattle we are feeding out. Seven pigs that will be bacon on someone's table this spring. I'am awaiting th arrival of my milk cow's baby calf. I have not been milking for about a month now. The break has been nice but I'm ready to start milking again. Since my markets have been over I have been doing some major cleaning in our house. I think I finally have it done and it only took me 2 weeks. Feels good to get rid of the clutter and dirt! The flu hit our house about a week ago and still have a couple people in our house down with it. Hope all is well with everyone and have a Blessed Sunday! Rebekah
